There must be a reson for your Sifu in telling you this. In my experiance I went through 14yrs of hearing the same thing asking the same questions and finally tested my WC knowlege sadly none of it worked as it was shown to me in class. My Sifu at the time would say "All you need is time on the floor" let me translate for you "Pay me more money you fool".
Now if you Sifu has not used it in an actual confortation he would not be able to coney that to you. After 14yrs I then met the MAN! who opened my eye SiFu Duncan Leung made it workable, applicable. Now don't go out and change your Sifu just yet.
I recommend trying this
1. What type of Wing Chun student do you want to be?
2. What results do you want to get out of your training?
3. Your ultamate purpose and goal.
try these out for starters. Then become the mad scienctist break down each part of your knowlege and put it to the test does you Tan sau work in this situation or that situation why and why not, do this for every bit of you knowledge from footwork to blocks/covers, movement, structure,etc. while all this is going on REMEMBER YOUR PRINCIPLES!!!!!.
You have to test what you know because NO ONE! does Chi Sau in the streets they will come at you from all angles, directions, pressure, force, distance, timming. (incase you have not noticed those are the things you should be working at also). Ask you Sifu to explain these in depth to you andhow they relate to WC. Always be thinking what if.
